Chef's Journey

Aharey Parboney is helmed by chef-owner Chirokalyan Mitra, whose love for food began in childhood — spending summers at his grandmother’s home, relishing bold Dhakai-style flavours and soulful homemade meals.

His culinary journey evolved from these nostalgic roots to working in Michelin-starred kitchens in New York and Chicago, where he refined his palate, technique, and creative vision. Mentored by renowned chefs such as Sujan Sarkar (the first Michelin-star Bengali-origin chef) and Akshay Bhardwaj (Executive Chef, Junoon New York), Chiro mastered the art of precision cooking, flavour layering, and high-intensity kitchen craft.

Today, he brings these global techniques back to Bengal — reimagining traditional cuisine with depth, sophistication, and heartfelt authenticity.
